Surrounded by the Cerro Datanli-El Diablo natural reserve, this estate produces exceptional Arabica beans with care from planting to export.
We start with their premium honey process lot—cherries are carefully pulped, leaving a layer of sticky mucilage (the “honey”) on the bean during drying. This method amplifies natural sweetness, yielding a cup that’s vibrant, fruity, and full of character. Nicaraguan honey-processed coffees often shine with notes of ripe berries, citrus brightness, caramel, subtle florals, and a smooth, honey-like richness.
To elevate it further, we’ve aged this exceptional coffee in a barrel previously holding Arrington Vineyards’ Antebellum—a distinctive Tennessee wine blend known for its depth, with influences from estate-grown grapes and extended maturation that adds layers of complexity, vanilla, oak, and subtle fruit undertones.
